Pasta chips with spicy tomato dipping sauce, credits to @Jeanrin.Yanling.
Great for family Christmas potluck dinner, party bites and promise to be a hit!
Definitely a keeper!
INGREDIENTS
Spicy Tomato Dips:
1 Tbsp olive oil
3 cloves garlic, minced
1/4 tsp dried red pepper flakes
1/4 cup Del Monte Tomato Paste
1 can Del Monte Tomato sauce
1/2 tsp grated lemon zest
Pasta Chips (Toss all together):
1 bowl of cooked pasta (choose ribbons and patterned pasta for a fun factor!)
1 tbsp olive oil (adjust to desire)
1 tsp garlic powder
Sprinkle Italian herbs and parprika powder
Add a small pinch of salt and dash black pepper (season to taste)
2 tbsp grated Parmesan cheese
STEPS
Heat oil in a medium saucepan over medium heat.
Add garlic and red pepper flakes; cook about 30 seconds, stirring constantly.
Add tomato paste and cook about 1 to 2 minutes, stirring constantly, until paste browns slightly.
Remove from heat.
Add in tomato sauce.
Return to heat and simmer about 20 minutes or until thickened.
Stir in lemon zest.
Serve with pasta chip (watch recipe in video!)
Tips: You can even freeze up the dipping sauce. All you need to do is microwave 30-50 sec if you prefer warm dipping sauce or you can just defrost it!
